Cake Mix Pumpkin Chocolate Chip Cookies
The easiest pumpkin chocolate chip cookies you will ever make! Made with a box of cake mix.
Ingredients
- 1 box spice cake mix
- 1 15oz can pumpkin puree
- 1 egg
- 1 teaspoon vanilla
- 3/4 cup semi-sweet chocolate chips mini chips
Instructions

Preheat oven to 375 degrees.

Mix the first 4 ingredients (cake mix, pumpkin, egg, and vanilla) together. Once combined mix in the mini chocolate chips until evenly distributed. The dough will be very sticky and soft.

Spoon or scoop 1 inch balls and place on a cookie sheet lined with parchment paper or a silicone baking mat.

Bake for 10 minutes or until the cookie springs back when touched. Let cool on the pans for a few minutes after baking.

You can either make mini cookies like the ones below, or larger cookies. Just make sure to adjust your baking time.
