Ingredients
2tablespoonsunsalted butter
1shallotminced
2clovesgarlicminced
1cuporzo pastauncooked (not the whole box)
2cupschicken stockreduced sodium
1cuphalf and half
1/2cup parmesan cheesefreshly grated
1tablespoonfresh basilchopped
1tablespoonfresh rosemarychopped
1tablespoonfresh flat leaf Italian parsleychopped
salt and pepper to taste
Instructions
Melt the butter in a large skillet over medium high heat. Add the shallot and cook until it becomes translucent, about 2 minutes. Then add the garlic and cook for 30 seconds.
Add the orzo to the skillet. Cook until orzo is lightly toasted and golden brown, 2-3 minutes, stirring occasionally.
Add the chicken stock and half and half. Stir, cover and bring to a boil. Decrease the heat to a simmer and cook until the liquid is mostly absorbed, 8-9 minutes.
Sprinkle the cheese over the pasta and stir until the cheese is melted.
Add the fresh herbs and stir to combine. Season with salt and pepper to taste.
