This copycat recipe for The Old Spaghetti Factory’s Spaghetti with browned butter and myzithra cheese is pure comfort food.
Have you ever ordered spaghetti with Myzithra cheese at the Old Spaghetti Factory? If you haven’t, you have to(!!), it’s one of our favorites. It’s the kind of meal where you will never have to say “two more bites” with your kids. Next time you are there, you should try the Manager’s Favorite and try combining myzithra cheese with one of your favorite sauces, it’s so good. My favorite is the combination of myzithra cheese with clam sauce. When you mix those two together it is so good! Pure comfort food!
How to brown butter:
To make browned butter, place cold butter in a cold sauté pan, we use salted butter, but you can also use unsalted butter if you prefer, and add salt after. In a medium sized sauce pan set to medium temperature, begin to melt and simmer the butter, careful not to let it burn. After several minutes, the butter will begin to foam, which is caused by the heating of the milk solids. As the foam drops to the bottom of the pan, it may begin to burn so use caution in not allowing too much heat to reach the butter, making sure it doesn’t become blackened. As the butter begins to turn into a caramel color with a delicious nutty aroma, start to decrease the amount of heat so it doesn’t burn. Remove the pan from the burner and allow it to cool for about 10 minutes or so. It can then be clarified (if you’d like) by pouring the butter through a fine mesh strainer into a heat proof bowl. Let it cool slightly. Add it to your recipe as desired. Whatever you don’t use will keep up to a week in an air tight container in the fridge.
How to Make Mizithra Spaghetti
Did you know that this simple spaghetti is so easy to make at home? Basically you just cook the spaghetti, brown the butter and grate the mizithra cheese. Toss it all together, and it is salty and delicious! Most gourmet cheeses can be found at your local grocery store. Here in Utah, I have found Myzithra cheese at both Harmons Grocery Stores and at Maceys Grocery Stores in the specialty cheese case.
Spaghetti with Browned Butter and Myzithra Cheese
Our favorite copy cat recipe: Spaghetti with browned butter and myzithra cheese, just like The Old Spaghetti Factory restaurant. Our kids devour it...it's so good!
Ingredients
- 1 16oz. box spaghetti cooked al dente
- 1 cup butter (2 sticks)
- 1 cup Myzithra Cheese grated
- fresh Italian flat leaf parsley *optional garnish* minced

Cook the spaghetti according to package directions until al dente. Remove the spaghetti from the pasta water, but do not rinse it.

Spoon the browned butter over the spaghetti. Sprinkle with the grated Myzithra Cheese and toss the spaghetti to coat it in the browned butter and grated Myzithra. Garnish with freshly minced flat leaf Italian parsley.
Recipe Notes
We love to serve this with other spaghetti sauces, garlic bread and a fresh salad for a complete Italian Dinner.

Mmmmm, we love it and my parents buy it all the time! Where did you find the block of it though? I've never seen it anywhere other than buying directly from OSF, and certainly here on the east coast I've never seen it. Tips?
