We eat a lot of chicken at our house. I have so many great chicken recipes, and I know my family will always like it. One of my favorite ways to keep chicken moist while baking is by rubbing it with Best Foods Mayo, and I usually add a little season salt for flavor too.
Baking chicken is a time saver for me, because I can do it earlier on in the day. I LOVE when I can get most of dinner prepped early in the day, I just feel so in control by avoiding that 5 o’clock hustle.
Here’s a time saving recipe that we love: Parmesan Encrusted Chicken (aka Parmesan Chicken or chicken parm). Here it is 3 ways: over salad with homemade ranch – over spaghetti with marinara – or on skewers for a fun appetizer.
When it comes to Mayo vs. Miracle Whip, I am a Mayo girl all the way! And when it comes to Mayo brands, it’s Best Foods (or Hellmanns) always. I grew up with it. West of the Rockies, it’s known as Best Foods Mayonnaise, everywhere else it’s known as Hellmann’s.
This recipe for Parmesan Encrusted Chicken is super easy! Just 4 ingredients:
1. Hellmann’s Mayo
2. Chicken breasts
3. Parmesan cheese (grated)
4. Italian bread crumbs
Here is my go to chicken prep:
1. Cut all the ‘extra’ stuff off with kitchen scissors (I WILL dish wash the scissors thoroughly afterwards).
2. Cut the chicken breasts into strips using the same scissors (it’s so fast, and I avoid having to clean a cutting board if I use scissors). A whole chicken breast takes too long too cook, and none of us would ever finish a whole one. Plus these chicken breasts are huge!
3. Pound out the chicken inside a thick plastic bag. This also cuts down the cooking time…this is one of my favorite quick tips!
Once the chicken is all prepped, you can cover it with the parmesan/mayo mixture.
Then you can cover it with the Italian bread crumbs.
Arrange all the pieces on a baking sheet (covered in tin foil for easy clean up), and bake at 425 for 20 minutes.

Now it’s up to you how you want to serve it up: Chicken Parmesan over spaghetti for a nice family dinner.
Over salad for a healthy lunch.
Or on skewers for a fun appetizer. Dip them in a marinara sauce or a homemade ranch. Yum!
