With St. Patrick’s Day coming up, here’s a fun idea to make with the kids: rainbow cupcakes!
You can even get them creating with their craft supplies to make the cupcake toppers. When they see the inside of these fun cupcakes once you cut them open, they will think they’re the neatest things!
Here’s what you need to start:
For the Cupcakes:
-a white cake mix
-food coloring (all the colors of the rainbow)
-a white frosting (homemade or store bought)
For the cupcake toppers:
-glue dots or regular glue
-small plastic gold coins
To start make the cake mix as directed and divide the batter into small bowls and add a different color to each bowl. Start with purple and add a little bit of batter of each color to each cupcake liner until you’ve added all the colors. Bake as directed for cupcakes.
Once baked and cooled, this is what they look like when you cut them open! Isn’t that so fun?!
Now for the cupcake toppers, we are going to go back to the basics with scissors, markers and good old white paper. Trace the bottom of a clear glass onto your white paper to make a circle. With the markers just color in a full circle rainbow to create two rainbows at once. Cut out the full circle and cut the circle in half to make two rainbow cupcake toppers.
With more white paper cut out simple clouds by hand. Assemble the clouds, rainbows together onto toothpicks and you’re ready to stick them into your cupcakes.
