People go nuts for this stuff! Seriously, every time I bring it to a pot luck, people always comment and ask for the recipe. When fresh corn is in season, this stuff is a must make!

This recipe could not be more easy, and the Italian Dressing Mix makes it even more easy. Just sprinkle it on and toss it all together.

Cowboy Caviar with avocados
Here’s a quick tip with avocados. I don’t know about you, but so often I would buy avocados and when I get home they are unripe and hard as a rock, so I leave them out on the counter at room temp to wait for them to get ripe. They would become ripe, and stay ripe for 0.2 seconds. Uggh! I would miss them at their peak and when I’d go to use them, they would already look bad. Never again!
Here’s what to do: When you feel your avocados start to soften up a little…when you gently press on the skin they have a little give. Move them into the fridge! In the fridge, they will keep at their peak up to a week. Which is awesome! Now you have a little more of a window of time to use your delicious avocados, and you don’t have to throw them out anymore. YAY!
As for the corn in this recipe, I would either use frozen corn or fresh corn, but not canned corn. If fresh corn is not in season, frozen corn is your next best option. Frozen corn is so great to always keep on hand in your freezer, especially for this recipe.

Cowboy Caviar also known as Fresh Corn Salsa
Ingredients
- 5 medium tomatoes chopped
- 2 green onions minced
- 1 bunch cilantro
- 1 avocado chopped
- 1 1/2 cups corn fresh or frozen
- 1 can black eyed peas drained and rinsed
- 1 package Good Seasons Italian dressing add in dry as is
Instructions

If using fresh corn, bring a small pot of salted water to a boil. Add the corn and cook until tender, 2 to 3 minutes; drain.

In a large bowl mix all ingredients together.

Serve with chips. Enjoy!

I make something very similar. I just use more beans. Black, garbanzo, red, pinto, and kidney. We all love it. It is a common request from friends and family.

This looks delicious, but I recently noticed that Good Seasons is no longer gluten free. They changed their formula last year and now have dried soy sauce which contains wheat. A total bummer for the Celiacs in my house!
I will have to try this recipe with something else, because it just looks so good!
I also need to contact Good Seasons and beg them to lose the gluten!
