We’re crazy for ice cream at our house, it’s definitely our dessert of choice. Here’s a great recipe for a fancy ice cream pie crust. Because sometimes eating it right out of the carton with a spoon just isn’t enough. This recipe is great for when you have to bring dessert to a big gathering. Just cut them into square to serve a crowd.
So I may have jazzed up the name of this recipe a bit, because plain old “ice cream pie crust” wasn’t doing it, so: “Happy Bottom Ice Cream Pie Crust” is much better, don’t you think?
Okay…here’s what you need to start for the pie crust. Don’t forget about the ice cream. Vanilla ice cream is always great with it.
Mix all your ingredients together.
Press into a 9×13 baking dish and bake at 350 for just 10 minutes.
Once cooled, you have a couple of options as to how you serve it. You can make fancy individual servings (like for a dinner party), by using a circle cutter. Just cut through the crust and then pack vanilla ice cream on top of it. Slide them both out of the circle cutter onto the plate and serve right away with a drizzle of caramel syrup.
Or you can spread a whole container of ice cream on top of all of it and freeze it all together. When you are ready to serve, just cut into squares and drizzle with caramel syrup, OR…you could always use it as an ice cream topping. Just break it up into small pieces and sprinkle over the top…but then it wouldn’t be a “happy bottom” any more. 😉
Here’s the recipe:
- 2 Cups rice krispies
- 1 Cup brown sugar
- ½ Cup melted butter (one stick of butter)
- ½ Cup chopped pecans
- ½ Cup coconut
- Combine all ingredients together and press into a 9x13 baking dish. Bake at 350 for 10 minutes.
