Super easy Cake Mix Pumpkin Chocolate Chip Cookies made in 20 minutes!
It’s officially pumpkin season! What’s better than delicious homemade pumpkin chocolate chip cookies? Pumpkin chocolate chip cookies you can make in less than 20 minutes or so. I know, right?!… pretty awesome, huh? These cookies are so moist and delicious. I’m certain they’ll be a crowd-pleaser with your family and friends this Fall season!
The simplicity of these cookies makes them a great neighbor treat or go-to cookie for those busy or “I forgot a treat for the Fall social” days. Plus there are only 5 ingredients in these cookies, and most of the ingredients are probably ingredients you have on hand. …And if you don’t have them on hand now, you’ll always want them on hand to make them again and again. They’re so good!
What Ingredients Are In Pumpkin Chocolate Chip Cookies?
It doesn’t take much to make these yummy cookies!
- Spice Cake mix
- One can of pumpkin (make sure to purchase pure pumpkin, NOT canned pumpkin pie filling)
- One egg
- Vanilla
- Chocolate Chips (we used mini chocolate chips)
How To Make Cake Mix Pumpkin Cookies
- Add the cake mix, pumpkin, egg, and vanilla to a bowl and mix well.
- Mix in the chocolate chips until evenly distributed. We used mini chocolate chips. The dough will be very sticky and soft.
- Spoon or scoop 1-inch balls and place them on a cookie sheet that is lined with parchment paper or a silicone baking mat. Using a cookie scoop will ensure that your cookies are the same size.
- Bake at 375 degrees for 10 minutes or until the cookie springs back when touched. Let the cookies cool on the baking sheet for a few minutes after baking, then transfer to a wire rack.
How To Store Pumpkin Chocolate Chip Cookies
It’s best to lightly cover these cookies and store them at room temperature. If you store these in an air-tight container, the outside of the cookie will get sticky.
How Long Do Pumpkin Chocolate Chip Cookies Last
Cookies will stay fresh for up to a week when stored at room temperature.

- Walnuts
- Milk chocolate chips
- Butterscotch chips
- Chopped candy bars
- Toffee pieces
- Use a larger scoop to make bigger cookies
- Bake in muffin tins
Will Other Cake Mixes Work To Make Pumpkin Cookies?
You bet! A yellow cake mix would work well if you can’t find a spice cake mix! Just add 2 teaspoons of pumpkin pie spice to the mix. If using a spice cake mix, no additional spices are needed.

The easiest pumpkin chocolate chip cookies you will ever make! Made with a box of cake mix.
Ingredients
- 1 box spice cake mix
- 1 15oz can pumpkin puree
- 1 egg
- 1 teaspoon vanilla
- 3/4 cup semi-sweet chocolate chips mini chips
Instructions

You can either make mini cookies like the ones below, or larger cookies. Just make sure to adjust your baking time.

Made these the other day as muffins and LOVED them! So easy and delicious. Wanted to make them for a friend who can’t have gluten. Can they be made with a gluten free cake mix? Do you know if the recipe or bake time/temp will need to be altered? Thanks!

I did make them with both a Namaste spice cake and Trader Joe’s Pumpkin muffin mix…both gluten free. I found that I needed to bake them about 12 minutes and make sure the cookies were not very thick by tapping the cookie sheet on the countertop so that the cookies would spread a little before putting them in the oven. Delicious! Also added 3/4 tsp of powdered chipotle pepper spice a couple of times to add a little heat.
