White Bean Chicken Chili is a must on a cold night. We love this simple crock pot meal.
It’s that time of year when a warm hearty soup is what we crave, and if it can be made in a crockpot, even better! This crockpot white bean ranch chicken chili is just that…a delicious mouthful of a hearty soup to warm you up. If you love using slow cooker, you’ll have to check out a bunch of our other favorite slow cooker / crockpot recipes.
This soup can be creamy or not, it’s up to you. Just add a big dollop of sour cream (the word dollop makes me laugh), and just mix it right in. You could also add chips too if you’d like.
Okay, here’s the lineup of ingredients. The full recipe will be below. I love to see all the ingredients lined up before I start. It also helps in case you forget anything.
You want to know something funny? People love to see the raw ingredients in the crockpot before everything is cooked. Isn’t that weird?! So I share it for those who like the visual. For those that get grossed out by raw chicken, sorry about that. If you are planning to make this soup as a Freezer to Crock Pot Meal, I you can freeze all the things you see here in a gallon sized bag. The other items like chicken stock and canned beans can be added later towards the end of the cook time.
We made a quick video so you can see it in action!
You’ll cook the chicken and other ingredients in the slow cooker until the chicken is cooked through and shreds easily.
Once the chicken is cooked all the way, you’ll take it out of the crock pot and let it cool for a minute. Then you will shred it with two forks and then add it back into the crock pot.

Remove the chicken from the crock pot and shred it. Return the shredded chicken back into the crock pot and add the drained beans, chopped green chilies, and corn. Add more salt and pepper to taste, if needed. Cover your crock pot with the lid and cook for another 30 minutes or until the chicken, beans, and corn are warmed through. I make a recipe similar to this that my family loves with green salsa mixed in, but I want to try your addition of ranch seasoning. Thanks for a great recipe!

The powdered ranch dressing curdled when I put it on high.Anything I can do to save it?
Kami says
Hi Kendall! Oh no! Sorry…it’s hard to trouble shoot this recipe from the computer. Can you whisk it in? I think you just need to keep whisking…it’s just an air bubble.
Toni says
How do u freeze ?
Sarah says
How do you freeze? just add it all in a bag except the sour cream? I want to gallon bag prep this meal.
Thank You
Kami says
Hi Sarah! I would freeze it without the liquid and without the sour cream.
BHill says
So I’ll want to just freeze the raw chicken and all the dry ingredients/onion/garlic? Then when ready to cook, add the broth to the crockpot along with frozen (or thawed?) chicken? And then the last 30 mins add the chilies and corn? Thank you!
Kami says
Hi Brittany! Yes! That’s right!
BHill says
Great, thanks! Making it today to prep for my newborn!
