Rotisserie Chicken Week

When it comes to chicken, I love rotisserie chickens. They are inexpensive, easy and work in so many recipes. Although after I saw Food Inc. and watched it again this weekend (you have to see it… have you seen it?). I looked at chicken (meat – in general) completely different. As much as I love the ease of a rotisserie chicken, I now want to make more of an effort in buying organic – cage free when I can.

Change needs to happen when it comes to the food that we eat in this country. Like they say in the movie… “we each get to vote 3 times a day”. Every meal we eat is a vote.

Some pros and cons:

Rotisserie Chicken Pros:
- I love that I don’t have to cook them.
- I love that they’re usually seasoned well.

Rotisserie Chicken Cons:
- I don’t love that the plastic container it comes in is not recyclable.
- I don’t love taking it apart – it’s messy.

Some things that I do:

-I usually buy 2 at the same time.

-Take the chicken apart (shred it) while it’s still warm from the store. It’s easier to remove the skin and the fat from the chicken.

-Freeze what you won’t use right away. Shredded-cooked chicken in the freezer is a great thing on those days that you are in a big hurry to get dinner on the table.

- Place a paper towel underneath the chicken in the container in the fridge.

I’d love to know, do you buy rotisserie chickens often?

I buy one at least every other week.

I love that I can make 2-3 meals out of them, plus boiling the bones for homemade stock. Yum!

I buy them for exactly the same reasons. Can't wait to see your recipes!

P.S. Could we start a blogger campaign begging Costco to use organic chickens?

I love rotisserie chickens. We probably have a chicken twice a month. The plastic container isn't recyclable? I always put mine in the recycle bin.

If you don't mind the work and want an even cheaper solution, I buy a whole chicken and cook it myself. It's easy and a whole cooked chicken with some yummy herbs can make a great meal–with enough meat leftover to shred and put in the freezer or use later that week. I do it all the time. The meat is perfect with BBQ sauce (my hubby's favorite), in enchiladas, in pot pie, etc. I'm excited to see some new ideas though. :)

I do what Erin does, I buy them myself and cook them, WAY cheaper. And I think I already told you this but at the Murray Costco they are organic! And cheap! And fits perfectly in the crockpot.

During college I worked as a manager at Macy's Deli and every night I deboned the rotisserie chickens from the day that didn't sell. So I really am a rotisserie chicken de boner pro! lol Makes the BEST chicken salad mmm mmmm

Since you asked, I've never bought one. Whenever I make chicken, I just use my slow cooker.

I am anxious to see all your tips and recipes!

I haven't bought a rotisserie chicken in a while because I have Celiac Disease and a lot of them have seasonings that I can't have ,which is a bummer because I used to get one at least once a week and use the leftovers BUT, I make my own chickens now it's a little more work but, it's worth it just for the leftovers, looking forward to your recipes!! ;)

I also love rotisserie chicken, however I've taken to poaching chicken breasts lately and love the result. It's easier to shred (with no bones), not as dry and I can control the amount of sodium put in.

    Thanks for the great recipes!
